Pumpkin Bread

Ingredients:
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 3-1/2 cups flour
- 2 tsp baking soda
- 1-1/2 tsp salt
- 3 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 can (15 oz) solid pack pumpkin
- 2/3 cup water
- 1 cup chopped nuts (optional)
Instructions:
Preheat oven 350 degrees F. Grease & flour or spray three (3) 5 x 9 loaf pans.
In a large bowl, cream together sugar and oil.
Beat eggs well and add to the bowl.
Add pumpkin to mixture and stir until blended.
Mix dry ingredients together in a separate bowl.
Stir in flour, baking soda, salt, and spices until mixture is smooth. Lastly, add water and chopped nuts.
Pour into prepared loaf pans evenly. Bake uncovered for 50 minutes or until toothpick comes out clean.
Let cool about 10 minutes before removing bread from pans.
