Meatloaf

Ingredients (Loaf):
- 1 lb ground beef
- 2 eggs
- 1/2 c breadcrumbs
- 1/2 c finely chopped sweet onion
- 4 cloves garlic
- 4 tbsp ketchup
- 2 tbsp worcestershire sauce
- 2 tbsp spicy mustard/dijon mustard
- 1 tsp salt
- 1 tsp black pepper
Ingredients (Sauce):
- 1/2 c ketchup
- 3 tbsp light brown sugar
- 2 tsp spicy mustard/dijon mustard
- 1/4 tsp ground nutmeg
Instructions:
- preheat oven to 350 F. lightly grease a rectangular loaf pan with cooking spray.
- in a large bowl, combine all loaf ingredients. mix and mush together until everything is thoroughly combined. using your hands to mix is the most efficient way to do so, if you don't mind messy, meaty hands!
- scoop the meat mixture into your pan. make sure it's spread evenly, and pack it in there good so it keeps its loafy shape. the top should be flat, not lumpy.
- bake for 30 minutes.
- while the loaf is baking, combine all sauce ingredients in a medium bowl. stir well until evenly mixed.
- after 30 minutes, remove the loaf from the oven, and spoon your sauce mixture on top. spread the sauce into an even layer, coating the entire top of the meatloaf.
- return loaf to oven for 15 to 20 minutes, until internal temperature reaches at least 160 F.
